Low Carb Chicken Caprese
I have been loving caprese lately and this recipe is perfect for a low carb dinner that is quick to make. If you are trying to incorporate more low carb meals into your daily life than I suggest you give this one a try! I like to make an arugula salad when I make this meal because all of the flavors come together.
But no worries if you are not low carb. You can pair this chicken with pasta, rice, or even on a sandwich. The trick to making this meal even more delicious is to drizzle some balsamic glaze over the chicken and arugula if you decide to make a salad.
Ingredients:
- 4 chicken breast
- 1 tbsp olive oil
- 2 tsp Italian seasoning
- 1 tsp garlic powder
- salt/pepper to liking
- 6–8 oz mozerella
- 2 tomatoes sliced
- handful fresh basil
- balsamic glaze drizzle on top
How to Make:
- Cut chicken in half, lengthwise, if you like a thinner cut. Drizzle olive oil over each piece of chicken, then season on both sides.
- Cook chicken on each side for about 3–5 minutes.
- Top each slice of chicken with a slice of tomato and mozzarella.
- Bake chicken until the mozzarella is melted for about 10 minutes.
- Top with basil and balsamic.
